Stir Fried Liver with Spring Onions & Ginger

Another home cook meal that came about when I found a piece of really fresh liver at Waitrose and decided to have it for dinner. This dish is rich in iron and great for ladies after that time of the month!

1. 300 g pig’s liver, cut to small thin slices
2. 1 tbsp light soy sauce
3. 1 tbsp oyster sauce
4. cornflour
5. 1 1/2 tbsp olive oil
6. 50g chinese wolfberry,
7. 5 stalks spring onions, cut to 2 inch length
8. 50g of ginger, julienned
9. 50g chopped garlic
10. ½ onion, thinly sliced

1. 3 tbsps chinese cooking wine
2. 1/2 tbsp sesame oil
3. 1 tbsp light soya sauce

Step 1: Marinate liver slices evenly with cornflour and light soy sauce and oyster sauce in a bowl for 20 minutes.
Step 2: Heat olive oil in wok.
Step 3: Sautee and brown the garlic, ginger and onion.
Step 4: Add the liver and Chinese wolfberries, stir fry for a few minutes Taking care not to overcook the liver.
Step 5: Add the seasoning
Step 6: The dish is ready to be served!
