Debz Mee Siam

Had a super strong craving for mee siam but can’t seemed to find any for sale, so what can I do? I have to cook it.
Here’s the easy peasy recipe!



1 tbsp cooking oil
10 shallots, chopped
2 cloves garlic, chopped
6 dried chilli, pounded
3 tsp belacan (shrimp paste)
1 onions, sliced
2 tbsp tau cheong (preserved yellow bean paste), pounded
2 tbsp assam jawa
1 litres water
20 Big Sea Prawns
sugar and salt to taste

Spicy Rice Vermicelli:

500gm rice vermicelli
4 tbsp cooking oil
3 shallots, chopped
2 tbsp chilli paste
5 tbsp dried shrimp, pounded
150gm bean sprouts, peeled.

Mee Siam Garnish:

1 egg, hard-boiled, cut in wedges
20gm chive, fresh
1 local lime, trim top
10 prawns, medium size, peeled
20gm soya bean cake, deep-fried, diced
sambal sauce (as much as u like)



Step 1: Mix assam jawa with water.
Step 2: Strain off pulp and reserve the juice.
Step 3: Stir fry the shallots, garlic, dried chilli paste and onions until fragrant.
Step 4: Add remaining ingredients and bring to boil.
Step 5: Reduce heat and simmer for 45 mins.
Step 6: Add seasoning to taste.

Spiced Rice Vermicelli:

Step 1: Soak vermicelli in cold water to soften.
Step 2: Drain dry, blanch in boiling water for 30 secs and strain.
Step 3: Heat oil in wok and cook shallots, chilli paste and dried shrimp until fragrant.
Step 4: Add vermicelli and bean sprouts and mix well.

Step 1:Place spiced rice vermicelli in bowl.
Step 2:Add piping hot gravy.
Step 3:Garnish with egg wedges, chopped chive, prawns, soya bean cake, fish cake and lime.
Step 4:Sambal chilli may be added.
