Chinese Stir-fry Noodles with Carrots and Lean Meat

Just a little one dish meal that I put together when I don’t feel like eating out and yet I don’t have the energy to cook an elaborate meal, cos its just me. Simple and easy with minimum fuse and can be whipped up in less than 30 minutes. Ideal for a lazy Sunday lunch or for dinner on that day when you all tired out from work.

Chinese Stir-fry Noodles with Carrots and Lean Meat


1. 1 packet of yellow noodles
2. 100grams of lean (pork/lamb or beef sliced thinly and seasoned with soy sauce and sesame oil)
3. 2 eggs
4. 50 grams of shallots (minced)
5. 100ml of lean pork/lamb or beef stock
6. 1 mid-sized carrot (sliced thinly)
7. 1 tablespoon of oyster sauce or to taste
8. 1 teaspoon of olive oil


1. Heat pan and add olive oil.
2. Brown the shallots before adding the lean meat and carrot
3. Add the eggs to the mixture and stir fry
4. Add noodles into the mix and mix well
5. Season the noodles with the oyster sauce.
6. Add the stock to the mix and simmer for 10 minutes.
7. Plate and serve.
